This Icewine is the Artisan Prince of King’s Court Estate Winery. It is created from the winery's estate grown grapes. Mother Nature's special winter kiss sets the stage for The Most Romantic Wine™. Grapes are left on the vine well into the winter months to naturally freeze and thaw. This process causes dehydration in the grape so it concentrates the sugars, acids, and extracts, thereby intensifying the flavors while adding complexity to the wine. The handpicked grapes are immediately pressed at the coldest moment of a winter’s night under the strict supervision of the VQA. Each pressed frozen grape creates just one smooth, rich, luxurious drop of Icewine juice. The juice is fermented in stainless steel tanks for at least 3 months or more by the artisan wine maker. It yields a dazzling amber color fading to a water white rim with an aroma of raisoned fruits and apricots. The palate reveals a complex mix of honey, dried apricots, and almonds nicely balancing a crisp acidity and sweetness to give a long finish.
